After that first week, every other week is a part of the acute phase until goal weight is reached.  I ate 500 calories from protein, 2 cups veggies or 1 cup veggies and 1 cup fruit, and one legal snack.  It was around the Fourth week I realized how important  it was for me to try new recipes so that i didn’t get bored.

Diabetic-recipes.com is a good website to reference to find some new recipes.  The key thing is to keep the carbs low and also limit the fat, referencing the vegetables on the Medi-Weightloss shopping list.  Stay away from any rice, potato or pasta dishes during the acute phase.  Also, if you just type “Low Carb” in the google search box, you’ll find many websites worth your time.

If you see a recipe that sounds good, but  let’s say it lists rices as an ingedient, just try it without the rice. Sometimes replacing the rice or pasta with cabbage or spaghetti squash works.

Look at the recipe on the diebetic-recipes.com website named, “Farmhouse Beef Casserole“.  This recipe is easily adapted for the Acute Phase of the Medi-Weightloss program, simply by leaving out the one potato it calls for. Spaghetti squash replaces grated potato wonderfully, so I would try using it as a substitute  As you cook the recipe, be sure to drain off as much fat as you can and make sure to use low-fat cheese.

Start a Recipe book to keep all your new recipes in.  I just used a 3-ring binder and plastic sleeves.  As I found a new recipe I liked or wanted to try, I printed it off and slipped it into the sleeve.  This recipe book will be the one I continue to use once I’ve hit my goal weight, and it will be filled with yummy healthy meals!

Make it your life commitment to always make an effort to reduce the fat in the recipes you make.  Most of the time you won’t even miss it.  And when you do use oils, use healthy oils that decrease cholesterol and LDL, such as Olive Oil and Canola Oil, and also try the oil sprays, wherein you will use less oil. Once you start cooking with less oil, you’ll wonder why you ever thought you needed so much!
